Raw food in Bali

I’m off to Bali tomorrow and getting excited about all the amazingly fresh and healthy food available, especially in Ubud, Asia’s raw food capital. Hot climate’s are perfect for increasing the percentage of raw food in our diets and with the British weather doing pretty well at the moment there’s no excuse!

If images of eating a boring salad or an apple spring to mind, let me give you a little insight into what can be done with simple, raw ingredients…

Here’s a lovely way of mixing fruit and greens with a tropical twist – stack rocket leaves, avocado slices, fresh mango and walnuts then make a dressing with extra virgin olive oil, red chili and lime juice. Sprinkle with grated coconut.

Try new combinations of fresh fruit to make a fruit salad that’s light and perfect for breakfast or dessert.

Or for a decadent treat that’s super healthy, try making these raw chocolate truffles…

Ingredients

  • ½ a cup of raw coconut oil
  • ½ a cup of raw cashews
  • ½ a cup of mild agave nectar
  • 1 cup of raw cacao powder
  • 2 tsp pure vanilla extract
  • A pinch of Himalayan crystal salt

In a food processor, process cashews, coconut oil and agave nectar until smooth. Add the remaining ingredients and process until well mixed. Chill in freezer for 10-20 minutes. The more chilled the mixture is, the easier it will be to roll into truffles. Once chilled, roll into balls and then roll into raw cacao powder. Store in the fridge as they will start to melt at room temperature!

There’s so many healthy benefits to these tasty treats including, a  high concentration of essential fatty acids and minerals to make skin glow AND raw cacao is a potent aphrodisiac!
