Marinated oriental chicken

A perfectly light, high protein, low carb dinner with plenty of flavour and colourful vegetables.

chickenYou can alternatively use turkey breast which is also protein-rich and low fat. Serves 2

2 organic chicken breast fillets, battened out thinly and each sliced into 3 pieces
4 tbsp tamari sauce
3 tsp sesame oil
1 tbsp manuka honey
Juice of 1 lime
2.5cm (1 inch) piece of fresh root ginger, grated
A little olive oil
4 handfuls stir fry vegetables (eg bean sprouts, mangetout, red peppers)
Handful fresh coriander, chopped

Mix together the chicken with the other ingredients, except the vegetables. Leave to marinate in the fridge for at least an hour. Put the oil into a hot work, add the vegetables and a teacup of water. Stir fry for a minute or two, then put the chicken on top. Lower the heat and stir-steam the chicken for 5 minutes or so. Serve with coriander and more tamari.
