Fresh salmon with avocado salsa

 

Ingredients:
  • Fresh salmon steaks
  • 1 ripe avocado
  • 1 red pepper
  • 1 red onion
  • 1 red chilli
  • 1 tablespoon fresh coriander
  • 1 tablespoon fresh lime juice
  • Salad or cooked vegetables i.e. broccoli
  • 1 lemon
Serves 2-4

Prepare the salsa by dicing the avocado, red onion, red pepper and red chilli finely chopping the coriander and squeezing a tablespoon of lime juice. Mix together in a bowl and leave in the fridge for 30 minutes.

Griddle or grill the salmon steaks for approximately 5 minutes on each side on a medium heat until cooked through and then serve with the avocado salsa and salad or vegetables.
