Aromatherapy salad

Aromatherapy doesn’t just mean a special type of massage. The benefits of this treatment come from a combination of touch and smell.

This mood boosting salad assaults your olfactory senses with the pungency of onion and the heavy, scent of basil. You’ll hardly have to eat it to feel better.

Makes 2 portions

  • 8 ripe organic tomatoes
  • 1 small red onion
  • 1 bunch of fresh basil
  • 2 tbsp extra virgin olive oil
  • Freshly ground black pepper
  • Pinch of Himalayan crystal salt

Wash and thinly slice the tomatoes. Peel and thinly slice the onion. Wash and dry the basil. Layer the tomato and onion in a large shallow dish. Pour on the olive oil. Tear the basil into small pieces and sprinkle over the top. Season with the salt and pepper. Serve with a source of protein to make a complete meal i.e. chicken, fish or mozzarella.
